Boil country ham for about 5 min to reduce salt content, set aside, dispose of salt water. Used a thick, large slice of country ham with bone removed
Fry the bacon to partially done, but not crispy, set bacon aside.
Leave fat in pan Fry onions in pan until translucent, starting to brown.
Add sauerkraut and continue to cook for a few minutes
Make a bouquet garni of the peppercorns, coriander, juniper berries, bay leaf and allspice berry.
Layer potatoes on bottom of medium-sized crockpot

put about half the sauerkraut/onion mixture into the crockpot. Add bacon, country ham, bouquet garni and pork loin chunks

Sear brats and Andoullie sausages in a bit of oil, just enough to carmelize skins a bit since they are precooked.
Add sausages to crockpot.

Add rest of sauerkraut/onion mixture to crockpot. Should just about fill it Add the 2/3 bottle of reisling or other dry/fruity wine
Cook on high until mixture starts to simmer, reduce to low heat, cook for about 6 hours Remove boquet garni, remove meats and cut into bite-sized chunks
On plate arrange all meats * kraut. Spoon some juices from crockpot over meats if not sufficiently juicy. Season with salt and pepper if necessary.
