Heat a 12" Dutch oven using 20-22 briquettes bottom until hot
Add sausage to oven and fry until brown. Remove sausage from oven.
Cut bacon into 1 inch slices. Add to Dutch oven and fry until brown
Add sausage, onions, garlic, bell peppers, and mushrooms. Saute until vegetables are tender

Whisk together eggs and milk. Season with salt and pepper.
Pour eggs over vegetable mixture
Cover and bake using 8 briquettes bottom and 14-16 briquettes top for 20 minutes until eggs are set up (takes 40 min in 350 degree oven even with DO preheated)

Cover top with cheese and replace lid. Let stand until cheese is melted.

Notes

NOTES : works better over campfire than in oven - when I made it in the oven at 350 F it took an extra 10 minutes or so to set up because I couldn't apply heat directly to the lid.

Serve with picante sauce. Instead of salt & pepper

I used Tony Chachere's salt-free cajun seasoning.

Sprinkling some spring onions over the top before serving might be nice

I have seen a variation with 2 punnds frozen hash browns added

Serve with biscuits & strong coffee
